Outside it’s dank. The heat has been scorching and the people of London are scorched red as a result. The tube seems more packed than usual, full of commuters suffering together in silence. Fanning themselves in an attempt to keep cool only circulates hot air around the carriage, although the rhythmic sound of newspapers and Oyster cards flapping around makes a good distraction from the heat. Did I mention that it’s also too hot to drink my coffee in the morning? First world problems.
I’ve been distracting myself from the commute with the book I’m reading at the moment. I take huge comfort in the fact Io non ho paura takes place in the Tuscan countryside during the hottest summer of the century. Imagine – being stuck in a cornfield with no escape – I’ll take my sh*tty commute and air conditioned office any day, thank you.
If you read the last two paragraphs and rolled your eyes at my whingeing then I’m sorry and here are some healthy and refreshing coconut popsicles, flavoured with lime juice and studded with smashed blackberries. They’re delicious and also vegan – we love vegan, right? Subbing my usual chocolate fix with these babies almost makes me want to hashtag bikini ready… almost.
Blackberry Lime Coconut Popsicles
Makes 12 popsicles
Handful of blackberries
1 teaspoon (vegan friendly aka non bone-char) sugar
600ml coconut milk
Juice of 1 and a half limes
1 tablespoon agave nectar
Smash the blackberries and sugar together with a fork and drop a little at the bottom of each popsicle mould.
Add together the coconut milk, agave and lime juice and whisk to combine. Pour the mixture into your moulds until about 2/3 full.
Insert the popsicle sticks and freeze for around 6-8 hours or until solid.
